Simple broccoli and mushroom quinoa

This is a simple and easy dish but is satisfying, packed with nutritious ingredients and full of flavour.

Serves 2
Cooking/preparation time: 20 minutes
Ingredients
2 cups quinoa
4 cups vegetable stock
1 broccoli head, cut into bite-sized florets
1 1/2 cups mushrooms, chopped
1/4 cup red or white onion, chopped
2 cloves garlic minced or 1 2tsp garlic puree
1 tbsp sesame oil
1 tbsp tamari soy sauce
1 tbsp coconut oil

Instructions
Put the quinoa and stock in a medium saucepan, cover and bring to the boil before removing the lid and leaving to simmer over a low heat.
Melt the coconut oil in a frying pan or wok and sauté the onion and garlic until soft.
Add the broccoli and mushrooms to the onion and garlic with 1/3 cup of water, cover and leave to cook over a medium heat until the broccoli is tender but still bright green.
Check and stir the quinoa regularly, adding water as necessary to prevent it sticking. The quinoa is cooked when the tails start to separate from the grains.
When the vegetables are cooked, add the sesame oil and tamari and mix until the vegetables are evenly coated.
Serve the quinoa topped with the vegetables.
