Simple broccoli and mushroom quinoa

This is a simple and easy dish but is satisfying, packed with nutritious ingredients and full of flavour.

Cooking/preparation time: 20 minutes


Ingredients

2 cups quinoa

4 cups vegetable stock

1 broccoli head, cut into bite-sized florets

1 1/2 cups mushrooms, chopped

1/4 cup red or white onion, chopped

2 cloves garlic minced or 1 2tsp garlic puree

1 tbsp sesame oil

1 tbsp tamari soy sauce

1 tbsp coconut oil

Instructions

  • Put the quinoa and stock in a medium saucepan, cover and bring to the boil before removing the lid and leaving to simmer over a low heat.

  • Melt the coconut oil in a frying pan or wok and sauté the onion and garlic until soft.

  • Add the broccoli and mushrooms to the onion and garlic with 1/3 cup of water, cover and leave to cook over a medium heat until the broccoli is tender but still bright green.

  • Check and stir the quinoa regularly, adding water as necessary to prevent it sticking. The quinoa is cooked when the tails start to separate from the grains.

  • When the vegetables are cooked, add the sesame oil and tamari and mix until the vegetables are evenly coated.

  • Serve the quinoa topped with the vegetables.
