MJ's Spicy Salad

I was bored of my usual salads and decided to experiment with some leftover spice mix I had made for a curry. The result is an unusual salad that I love. I hope you like it too!

Serves 2-3
Preparation time: 20 minutes
Ingredients
1/3 of a cabbage
2 large carrots
1 apple, grated
1/2 a thumb-sized piece of fresh ginger, grated
1 cup cooked or canned or sprouted chickpeas or lentils
1/2-1 tsp Curry Spice (recipe below)
1 tbsp olive oil
1 tbsp apple cider vinegar
1/2-1 tbsp honey
1/2-1 tsp garlic puree or 1/2 garlic clove minced
Salt and pepper
2 tbsp seeds e.g. pumpkin, sunflower, hemp, sesame etc.
2 tbsp raisins
NB: Add ginger, garlic, spices and seasoning to your taste.
Instructions
Finely slice the cabbage and place in a large bowl.
Grate or slice the carrots into strips using a vegetable peeler and add to the bowl.
Grate the apple and ginger and mix into the cabbage and carrots with the chickpeas or lentils.
In a small bowl or cup combine the spice, oil, vinegar, honey, garlic, salt and pepper. Stir into the vegetables until they are evenly coated.
Lightly toast the seeds in a frying pan and sprinkle them and the raisins over the salad.
Serve and enjoy!
Curry Spice Mix
Ingredients
1 tbsp Turmeric
1 tbsp Paprika
1 tbsp Curry Powder
1 tbsp Cumin (Black Cumin if possible)
1 tbsp Coriander
1 tsp Cayenne Pepper
Instructions
Combine and store in a jar.
